When it’s only 7 a.m. and the heat is already too hot to handle, you know it’s time to go for an iced coffee! Carolina Girl Cooks put together a refreshing iced coffee recipe to make sure you don’t lose any of the intensity of your normal cup o’ joe. Note: you do have to prep a few hours or the day before so make sure to watch the weather forecast!
Brew Your Coffee. Brew eight cups of coffee as you normally would using your favorite coffee. Let it cool completely.
Coffee Ice Cubes. Fill an ice tray with about one cup of the coffee. Freeze completely. Chill the remainder of the coffee until you’re ready to use.
Add the Sweetness. Mix 4 tablespoons sugar (or more depending on your taste) and ½ cup of coconut milk (or your favorite dairy or non-dairy creamer) until it’s dissolved.
Mix it All Together. When you’re ready to enjoy a cup, put a few ice cubes in your glass, add your sugar/milk mixture and garnish with a fun straw and mint sprig.
